Today I have eaten:
1 Package of Microwave Brown Rice
1 Can of Chunk Chicken
1 Can of Vegetarian Baked Beans
2 Reese's Peanut Butter Cups
2 Rice Cakes w/Strawberry Preserves
That's probably around 1200 calories, which I don't think is nearly enough. I still have some yogurt upstairs and there's more fruit as well, so in about an hour or so I'll probably go up and fix myself a bowl. That should push me up to about 1500? Hopefully.
I never though I'd have a problem hitting my minimum calories on a diet, but doing that while trying to eat healthy is kind of a challenge. Junk food just has so many more calories per serving!
UPDATE:
I had the yogurt but passed on the fruit. And the yogurt had less than 100 calories, so I'm probably around 1300? The fruit was black cherries (which I have no strong desire for) and some questionable strawberries (they've got white fuzz on some of them).
I think I might have to start incorporating fruit juices or skim milk into my diet, just to up my calories.
