So, I've decided that I'm going to mix things up a bit this week. Instead of counting calories, like I always do, I'm going to count grams of fat.
I've figured out that I can eat about 74g of fat per day.
That's about 660 cals on a 2200 calorie diet.
If I eat fat-free stuff, like veggies, I should be okay, but this way I can enjoy a couple of fatty things without going completely crazy and once I hit that 74g limit, I stop.
If this doesn't make sense to anyone else, I'm sorry, but it makes sense to me.

Today, I have eaten:
1 plate of salad
1 small container of mustard potato salad
3 bananas
1 small package of turkey
1 package of fig newtons.
Calorically this is about 2100 cals altogether. Not bad, calorie wise, although as far as eating underprocessed goes this is kind of a fail.
Still, I feel like I'm getting off to a good start.
